Cowboy butter and dipping sauce (apparently it's a viral thing)

Cowboy butter and dipping sauce

I didn't know there was such a thing as Cowboy Butter until I tried it with prawns at our local pub. The pub has just been taken over by some new owners and the prawns in cowboy butter was a new side dish on the menu. Yum! Then I did a search and found out that apparently this was viral on the clock app about a year ago. Since I have a hate-hate relationship with that app, I had no clue. I am not what you'd call a trendy person. Good thing the new owners of our local pub is. I'm making it today to go over a tomahawk steak we got from our local butcher, so decided to throw up the recipe on the website. Enjoy!

Here's the recipe:

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh cilantro (coriander), chopped (optional)
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon Worcestershire sauce or soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Mix Ingredients: In a bowl, combine the softened butter, parsley, chives, cilantro, red onion, garlic, smoked paprika, cayenne pepper, Worcestershire sauce, Dijon mustard, and lemon juice and zest.
  2. Season: Add salt and pepper to taste, mixing well until all ingredients are fully combined.
  3. Shape: Transfer the butter mixture onto a sheet of parchment paper. Roll it into a log shape, twisting the ends to seal.
  4. Chill: Refrigerate for at least 1-2 hours until firm. You can also freeze it for longer storage.
  5. Serve: Slice the cowboy butter and serve it on your favorite grilled meats, vegetables, or bread.

Tips

  • Feel free to customize by adding other herbs or spices according to your taste.
  • This butter can be stored in the refrigerator for up to a week or frozen for several months.
  • If you want it as a sauce or dipping sauce over steak, gently melt the butter over medium heat in a pot and mix all the ingredients through it.

Enjoy your cowboy butter!

PS. We had it as a dipping sauce.
