Cowboy butter prawns

You guys!!! I'm still on my cowboy butter kick and I've got a batch in the fridge. It's a compound butter and it keeps. I've using it for this and that, and the other day I had some leftover eggs that I used in an egg wash. I didn't want to throw out the eggs so I mixed in some cowboy butter and voila! Cowboy butter scrambled eggs. It was super easy, but if you want the recipe for that, let me know. But today, I'm here to talk about using the cowboy butter with prawns which I cooked up for a quick evening snack. Took about 10 minutes all up to make, so this is FAST. And oh so yummy!!

If you're curious about cowboy butter (a friend asked me what it was when I posted a pic of this dish on my personal FB) and Mr Google to the rescue. According to Mr Google, "Cowboy butter is believed to have originated from the American Southwest, particularly influenced by cowboy culture and outdoor cooking traditions. What Mr Google didn't say is that it recently blew up on the clock app and went viral.

Here's the recipe:

Ingredients

  • 2 tablespoons cowboy butter
  • 1 teaspoon spicy sriracha chili sauce (optional)
  • 1 tablespoon olive oil
  • 6 large fresh or defrosted prawns, cleaned and rinsed
  • 50g konjac noodles, washed and rinsed
  • Chopped spring onions (for garnish)


Instructions

  1. Prepare the Ingredients:
    • Ensure the prawns are cleaned and rinsed thoroughly.
    • Wash and rinse the konjac noodles until the fishy smell is gone.
  2. Heat the Pan:
    • In a small pan, add the olive oil, cowboy butter, and sriracha chili sauce.
  3. Melt the Butter:
    • Cook the mixture gently over medium heat until the cowboy butter is fully melted.
  4. Cook the Prawns:
    • Add the prawns to the pan and cook for about 3 minutes, stirring occasionally, until they turn pink and are almost fully cooked.
  5. Add the Konjac Noodles:
    • Once the prawns are nearly done, add the konjac noodles to the pan. Toss everything together to ensure the noodles are fully coated with the cowboy butter sauce.
  6. Finish Cooking:
    • Continue cooking for an additional minute, until the prawns are cooked through and the konjac noodles are heated.
  7. Garnish and Serve:
    • Remove from heat, garnish with chopped spring onions, and serve immediately.

Note:
(1) If you are using anything other than konjac noodles, make sure to cook the noodles according to the packed instructions before adding them into the pan with the cowboy butter and the prawns. Konjac noodles do nor require cooking, just warming up, but other noodles may require cooking.
