I was influenced by social media for this recipe. I saw a quick video
suggesting that I use focaccia as the board for a charcuterie board and then
piling the charcuterie ingredients on top. Then tear and eat. The focaccia
was amazing.
Right, don't laugh, okay? But the truth is, sometimes I have very basic
tastes. Any Aussie who's any Aussie will have had a BBQ chicken or a
charcoal chicken or a Coles or Woolies roast chicken at some point in their lives. If you're an Aussie
you will know what I am referring to. I think Americans call them rotisserie
chicken?
I'm not big on dessert since I'm a diabetic, so you won't find me baking a
lot of cakes and cookies. But I had this idea that I wanted to serve a
dessert with Christmas lunch. A friend mentioned a trifle, and I thought,
hey, it's mango season and I could do a twist on a traditional trifle. No
cake since your girl barely bakes.
Okay, here's something that's going to go down well on a hot, hot day.
Especially if you love pina coladas. The rum is optional, but what's a pina
colada without the rum?
Confession time. I love instant noodles. Or as they call it in my neck of
the woods - ramen noodles. It's my ultimate comfort food and I've come up
with lots of creative ways of making it rather than just straight out of the
pack. I've got a recipe using leftover curry sauce with instant noodles
that's awesome.
You guys!!! I'm still on my cowboy butter kick and I've got a batch in the
fridge. It's a compound butter and it keeps. I've using it for this and
that, and the other day I had some leftover eggs that I used in an egg wash.
I didn't want to throw out the eggs so I mixed in some cowboy butter and
voila! Cowboy butter scrambled eggs. It was super easy, but if you want the
recipe for that, let me know. But today, I'm here to talk about using the
cowboy butter with prawns which I cooked up for a quick evening snack. Took
about 10 minutes all up to make, so this is FAST. And oh so yummy!!
This was my first attempt at Portuguese food. I thought, oh, it's a
sandwich, it can't be that hard to make. Well, it's a LOT of sandwich and
the sauce is epic, but took some effort. Otherwise, yeah, it's not that
hard. This is a very iconic Portuguese dish and I'm convinced whoever
invented it was looking for a cure for a massive hangover after a big night
out.
