Easy leftover curry noodles

A little while ago I posted a recipe for my Easy Yellow Chicken Curry. That was delicious but we had a serve of leftovers and also a lot of leftover curry sauce. I was going to toss out the sauce but The Boy insisted I save it. He said the sauce was so good, we could have it over noodles or rice again. Listening to him, I kept the sauce. I finally decided to use the sauce and cooked up a delicious, simple noodle dish.It was definitely more-ish.

Grown up mac and cheese

Grown up mac and cheese

I've been meaning to make this dish for a long time. I saw it years ago in a video and wrote down the recipe. In the last month, I've been putting it on my list while meal planning and for some reason, it keeps getting knocked off. I finally got round to cooking it today and boy, it's delicious. It's certainly not your regular Kraft box mac and cheese. I like to think that I'm being a little healthier by adding spinach and tomatoes.

Gourmet hot dog with a German cheese kransky


A friend of ours posted a picture of a gourmet hot dog for lunch one day and when The Boy saw it, he immediately wanted to have it for lunch too. The very next day we headed out to our local Aldi to get the ingredients to make them, heedless of the leftovers we had in the fridge that still need to be eaten. The leftover will keep for another day cos these hot dogs turned out to be delicious. The Boy says they could be the best hot dogs he's ever had so thank you to my friend for the inspiration.

Easy yellow chicken curry


I had a craving for a curry the other day and remembered I had some chicken drumsticks in the freezer that needed to be eaten. That made my decision for me. An easy slow-cooked yellow chicken curry because I wanted the chicken to be so tender that it would fall off the bone. The Boy being the tease that he is even complained that the chicken was too tender. He didn't mean it. This turned out to be a simple but delicious curry.

Malaysian sambal stir-fry noodles


I was planning a kimchi noodle dish for lunch and I didn't plan ahead very well. When it came time to cook lunch I discovered that I didn't have any kimchi in my pantry. I usually keep a jar or two in my pantry for whenever I felt like cooking a kimchi dish. Alas, I used it up the last time I cooked a Korean dish and never restocked. So I had to improvise. I ended up with this Malaysian sambal stir-fry noodle dish since I spotted a jar of the Malaysian sambal stir-fry paste on my pantry shelf. Turned out great and there were no leftovers.

Easy pork belly stir fried noodles


I've been having a craving for noodles for a while recently since we've been having a lot of leftovers after a particularly large batch of fish curry. Who knew that the recipe would cook such a large batch of curry? Not me! Anyway, we've diligently made our way through all the fish curry leftovers and I was more than ready for something different. I always love noodles and really, I like to have noodles at least once a week or I go into withdrawals. I had pork belly in the fridge and decided to throw this together. We do have leftovers though but I've reduced the recipe so that it serves four instead of eight here.

Easy fish curry


The Boy asked for fish recently and I was kind enough to oblige by making him a fish curry. Turns out he wanted slabs of grilled or baked fish with vegetables. Hah. Too bad. He had to eat the fish curry. Incidentally, it was a super delicious fish curry. And so easy to make.

Rainbow pasta salad



This dish started about a week ago when I had some leftover duck from a meal out and I was trying to figure out what to do with it. I decided on a simple pasta salad with some bow pasta I had. It turned out to be delicious. The bright colors from the spring onions and tomatoes make this dish not only tastes but bright and fun too. It's like eating the rainbow.

Creamy tomato pesto and chicken pasta


Every now and then I fall back on an easy favorite. Some form of pesto pasta. Recently, when I went to the store, they didn't have basil pasta, so I ended up with tomato pesto instead. I did what I usually do with pesto and pasta and this I think turned out even tastier than my usual basil pesto pasta. I might like it a little better than the basil version and if you want basil pesto instead of tomato, just switch it out. Easy peasy.

The Boy suggested we make a Hurricane cocktail. Of course, I take the opportunity to turn anything I can into a frozen cocktail because that's what I like. This one turned out great and I love the frothy, frozen texture. It went down a treat too.

Strawberry Dream cocktail


You should know by now I have a thing for frozen cocktails. If there's a way for me to make a classic cocktail frozen, I will. I know it's very girly of me but I love these sweet, frozen cocktails. This is one that The Boy made up. He wanted to use the Strawberries and Cream Baileys we had so he came up with this deliciousness. The Boy calls this his Cocobanaberry Dream Cocktail. I'm just going with Strawberry Dream. Not as exotic I know, but it's easier to remember.

Kahlua espresso martini cocktail


The estate where we live is also a winery and we make our own wine which is sold to the public and to owners. The wine committee recently shared a recipe for an espresso martini using one of our wine liqueurs. It's super simple to make and delicious. Of course, you don't need to use our estate's wine liqueur, you can pretty much use any brand's.

Easy lamb vindaloo curry


I don't remember what inspired me to try making a lamb vindaloo curry since it's not a curry I automatically gravitate too. I've been burned too many times by a vindaloo that's too hot. This one is spicy but it's not terribly so and combined with a good dollop of yogurt it really cuts down on the heat. Turned out very tasty.

I've been experimenting with more Asian cooking recently and came across a video using kimchi to cook in noodles. I thought it sounded interesting and well, I like kimchi. Wasn't sure how The Boy was going to enjoy it since the kimchi flavor is pretty strong. Turns out he loved it.

Thai basil pork noodles


I love noodles. Doesn't really matter what kind of noodles, I love noodles. I especially love instant ramen noodles. They are a guilty pleasure of mine. These are not instant and they are delicious, but super easy to make. They really don't take more than 15 minutes to cook including prep.

Chili con carne supreme


I love chili con carne but don't have it often. I think I've only ever cooked it once or twice in the past. Of course, The Boy's mother makes a great chili con carne and he's used to the taste of hers, so I'm twitchy about him eating it and saying it doesn't taste like his mother's. He did that with a meatloaf I cooked once and I've never done it again. Now he only gets meatloaf when we visit his mom.

I think I mentioned I've been watching a lot of cooking videos recently. They are my entertainment, relaxation, inspiration, and masterclass all rolled into one. I'm finding even if I don't cook the recipes I watch, I learn a lot of general knowledge about cooking and food, and some technique as well. It's generally a great education in bite-size pieces. I find it a fantastic learning experience.

Over the years, my tastes have changed and as a result, my cooking has changed. This blog has seen me start to learn to cook. Experiment with all sorts of things. Buy a Thermomix (there are lots of Thermomix recipes here), go paleo, and now an Asian phase. There's still a huge mix of Western and Asian in my cooking but I'm expanding my horizons progressively. This is a journey.

Easy stir fried noodles



For years and years, I have said that I would not cook Asian food and if I wanted it I would go eat at my mum's house. Well, that's not exactly working right now with the quarantine and lockdown, is it? And recently, I've really gotten into watching Asian cooking videos on YouTube. I finally bit the bullet and started stocking Asian grocery staples in my pantry (don't even ask me about trying to find space in my pantry for it all!!) and started cooking my own Asian food. It's noodle and rice dishes mostly, but also some curries as well.

Asparagus and bacon frittata



A few years ago we went paleo and ate a lot of eggs. Lots and lots of eggs. While it didn't necessarily put me off eggs, after we went off the paleo diet we didn't eat as many eggs as we did during the diet. I guess I needed a break. The Boy has been asking for dishes with eggs more frequently because I guess he's missing them.
