Paleo sweet potato and bacon hash


So I'm on a bit of a roll with cooking blog posts recently because I've been trying out some new recipes and I'm cooking a bit more. Don't get me wrong, I cook all the time, but quite often I redo old favorites, like dinner tonight, for example. Meatballs in tomato sauce with zoodles. It's an easy recipe that I do all the time.

This one is one of my favorites. We've been doing a lot of experimentation with breakfast lately because I like to keep it fresh but this is a favorite. I cook this at least once a week with leftovers for the rest of the week or once every two weeks so we don't get tired of it.

Paleo tortilla Espanola con chorizo


My breakfasts have become pretty standard and I was looking for something a little different to add variety into our meal choices. With paleo, there's a lot of eggs and a lot of bacon and a lot of sweet potato, not that I mind but I don't want The Boy to get bored and I like to change up our meals.

We've been doing a lot of the breakfast bake which The Boy loves and also a sweet potato hash which is a personal favorite but I wanted to change it up a bit.

Paleo Irish stew


I've had a hankering for some stew and something slow cooked for a while now. This summer has been so hot it's been prohibitive to cook anything in the oven without us expiring from the heat. Mostly we've been eating salads and cold dishes or something that is quick to cook on the stove. I was missing those hearty meals. Now that it's gotten a little cooler I decided a stew was in order.

Paleo Indonesian nasi goreng (fried rice)


I've been on a "rice" kick lately ever since I cooked that Thai style fried rice and I've been looking for recipes in order to make more "fried rice" recipes that can be converted to paleo.

I decided to try an Indonesian nasi goreng and found this recipe on the interwebz (thank you!) and have adapted it to paleo. For those of you who are not paleo, just substitute the paleo kecap manis (Indonesian sweet soy sauce) for regular kecap manis and substitute the cauliflower and broccoli rice with regular white rice that is cooked and left overnight. Fried rice is best cooked with leftover rice if you are going to cook it with regular rice.
