A friend of ours posted a picture of a gourmet hot dog for lunch one day and when The Boy saw it, he immediately wanted to have it for lunch too. The very next day we headed out to our local Aldi to get the ingredients to make them, heedless of the leftovers we had in the fridge that still need to be eaten. The leftover will keep for another day cos these hot dogs turned out to be delicious. The Boy says they could be the best hot dogs he's ever had so thank you to my friend for the inspiration.

Paleo Italian pumpkin and sausage breakfast casserole
In an effort to be healthier, we did a big Spring clean of our pantry (so many expired things lurking in the back corners!) and have decided to cut out wheat (going gluten free) and carbs.
We're going gluten free because I've been feeling rather unwell in the morning after a dinner which contains wheat, like pasta of some sort. Cutting out carbs is just a good idea all round.
In our hunt for healthier food recipes, we're dipping our toes into some Paleo recipes and many gluten free ones. In a happy coincidence, Paleo is also gluten free. :-)

Bangers and mash ... in the Thermomix
This morning, I had no idea what I was going to cook for dinner. Both The Boy and I stood in front of the freezer with it pulled open staring inside looking at what we had. We had a meat pie (beef, bacon and cheese - YUM!) for dinner last night, The Boy had had a few pasta dinners from the mac and cheese I made on Sunday and some leftover spaghetti that I brought home from lunch one day so we had a bit of a conundrum.
After looking at the freezer for a little while I pulled out a bag of frozen gourmet sausages - I forget what kind. I asked The Boy, "How about sausages?" to which he responded, "Can we have bangers and mash?"
I've never really made bangers and mash before, but really, it's not that difficult. It's just a bunch of cooked up sausages and mashed potatoes. Of course, I was going to serve our usual side salad of mixed lettuce leaves in a caramelized balsamic vinegar and olive oil dressing.
The most complicated thing for this *very* pedestrian dinner (I'm finding, I'm rather good at making pedestrian food!) was making the mashed potatoes.
There are so many ways to make mashed potatoes. There is the traditional and probably most commonly used way - boiling and then mashing the potatoes with a potato masher. There is my restaurant style mashed potatoes way and then there is the Thermomix way.
I decided on the Thermomix way tonight because I wanted no fuss and I also wanted it to be quicker than the 1.5 hours it takes to make the mashed potatoes restaurant style. Plus I'm cooking on a weeknight, any shortcuts are welcome!
Here's the RECIPE for mashed potatoes made in the Thermomix:
Ingredients
- Mashed potatoes
- 800 g potatoes
- 200 g light or full-cream milk
- pinch finely ground sea salt
- 20 g Butter
- Pepper to taste
Preparation
- Peel 800 grams potatoes and dice into 2cm cubes.
- Place in simmering basket.
- Add 200mls lite milk or full if you prefer. Add a little salt.
- Cook at 100 degrees for 20 minutes or so on stir spoon.
- When tender, add butter and a little milk if required and turn speed to 4 for approximately 30 seconds.
- For extra zing, stir through half a teaspoon of horseradish paste. For extra creamy mash, use the butterfly to whisk and use cream instead of milk or half cream, half milk.
Since there were only the two of us, making 800g of potatoes was going to be too much, so I used two potatoes (medium sized) instead. That was about half the recipe - 400g, I think, so for everything else I halved the recipe though I did use extra butter. I think I might have doubled the butter! :-)
Instead of cooking it for 20 minutes, I went with 25 minutes just to let some more of the liquid evaporate.
I cooked it on Speed 1, instead of stir spoon.
I added two pinches of salt, which wasn't quite enough. I think it might have needed at least another pinch of salt.
I also added a generous amount of pepper and finally about 2 tablespoons of truffle oil because The Boy loves truffle mash.
Finally, where it was supposed to "mash" on speed 4 for 30 seconds, I added the butterfly and used that on speed 4 for 30 seconds.
After that it was just a matter of serving, putting the cooked sausages on top and adding the side salad, then digging in.
It was another one of those very yummy pedestrian dinners The Boy loves so much.

Hot doggedy dog!!!
There hasn't been much going on in the cooking front since we've had a 3 day long weekend for the Queen's birthday but for us an added 1 day to make it a 4 day weekend as we took an extra day off work.
We're up in The House and enjoying some quiet and fresh country air. Absolutely delightful.
The Boy was very excited about being up and making hot dogs for dinner, so he decided to cook.
There's really nothing much to rave about here, we threw a bunch of sausages on the little electric barbie that we have since it's freezing cold and just much too cold to fire up the big barbie for 3 sausages and one onion.
He very expertly cooked up the 3 sausages (Coles brand - beef with herb and garlic, which incidentally are even better than the gourmet sausages we get from the butcher - go figure!) and one sliced onion. We got a little fancy with the onion and threw some maple syrup on it to caramelize it a bit. That maple syrup was a very good idea, boy were those onions good!!
On top of that, there was some corn on the cob which I did in the microwave. Yes, I know, it's cheating but it's fast and it works well. I learned it from The Mother In Law. Absolutely brilliant. 4 minutes per corn. We had 4 and I went for 12 minutes cos I thought 16 minutes would have overdone it. The corn turned out perfect and stayed hot / warm throughout the meal.
So, all in all a very simple meal but delicious and really, just what we needed and wanted for a chilly winter night.
Of course, the only down side to it was The Boy forgot to turn on the exhaust fan and we got a living room full of smoke and BBQ sausage smell. We fixed that in the morning with opening doors and windows and burning a few candles.

Superb bangers and mash ... I didn't cook this
I didn't cook dinner last night. A friend took us out to dinner, and we headed over to another friend's restaurant - HUX @ Nortons, which is in the Nortons on Norton pub at 1 Norton Street, Leichhardt. The restaurant is being run by my friend Jay Huxley from Masterchef Australia and he is a superb chef.
The food is amazing and really good value. This bangers and mash dish was $11.
Oh and don't forget to try the brownies with vanilla bean ice cream and berry coulis. Also incredibly delicious.
