I've had a hankering for some stew and something slow cooked for a while now. This summer has been so hot it's been prohibitive to cook anything in the oven without us expiring from the heat. Mostly we've been eating salads and cold dishes or something that is quick to cook on the stove. I was missing those hearty meals. Now that it's gotten a little cooler I decided a stew was in order.

Paleo Indonesian nasi goreng (fried rice)
I decided to try an Indonesian nasi goreng and found this recipe on the interwebz (thank you!) and have adapted it to paleo. For those of you who are not paleo, just substitute the paleo kecap manis (Indonesian sweet soy sauce) for regular kecap manis and substitute the cauliflower and broccoli rice with regular white rice that is cooked and left overnight. Fried rice is best cooked with leftover rice if you are going to cook it with regular rice.

Paleo Thai styled cauliflower fried rice
I've been looking for different recipes to use with cauliflower rice and this one caught my attention from the Real Paleo Fast & Easy by Loren Cordain PhD cookbook. It's super tasty and has become a favorite at home.

How to prepare zoodles (zucchini noodles) and brief overview of spiralizers
Since we started on the paleo diet (more on that in another post), The Boy and I have been substituting zoodles (zucchini noodles) for pasta instead of eating wheat or even gluten free pasta.
Granted, it doesn't taste like pasta and the texture is different but it's not a bad alternative and we feel much healthier for it. It's lighter for sure and I love that we are getting so much more vegetables in our diet. A favorite dish is a chicken pesto zoodle.

Paleo raspberry breakfast bars
I guess The Boy got tired of not having anything yummy for breakfast because he asked for the paleo breakfast bar I like to make for us occasionally. This time he wanted raspberries but really, you can do it with any fruit. We've done it with blueberries too.
It was 42°C outside but for The Boy, I put the AC on and then turned on the oven to make these for him. :-)
